Skill Level: Intermediate

This is not a beginning baking or cookie 101 class. You should have some experience with cookies and royal icing before participating, such as understanding the difference between royal icing consistencies.  No previous fondant experience is required.

Overview

In this class, Liz will be teaching three highly-layered, textured holiday cookies: a woven basket overflowing with festive greenery, a lush wreath, and a realistically-draped cozy (and tasty!) scarf.  We’ll be using similar techniques in different ways across all three cookies in order to create unique looks for each, while still keeping the set cohesive.  Additional techniques being taught include:

  • Fondant for cookie-decorating
  • Planning and workflow for multilayered cookie designs
  • Combining royal icing and fondant for maximum depth and details
  • Creating multi-layered woven textures and greenery with royal icing
  • Making 3D fondant bows from scratch
  • Draping and attaching fondant for realistic fabric effects
  • 3D flocked fondant pine cones
  • How to repeat and reuse similar techniques and materials to create a cohesive set of designs
  • Layering design elements for maximum visual impact

Supply List

Because we’ll be working with mixed media, you’ll need access to the following items.  We carry many of these supplies in our shop, but they can also easily be found on Amazon and at Micheal’s, Jo-ann Stores, or your local baking supply shop:

  • Royal icing (piping consistency)
  • Fondant
  • Tipless piping bags
  • Scribe tool (or toothpick)
  • Toothpicks
  • Cutting surface (I use a self-healing cutting mat)
  • X-acto knife, PenBlade or straight-edge cutting tool
  • Sharp embroidery or craft scissors
  • Rolling pin (I’ll be using a fondant rolling pin)
  • Brown food pen, charcoal pencil, or pencil
  • Unused, soft-bristle toothbrush for painted effect (I use a baby toothbrush)
  • Caster sugar (for flocked pine cone effect)
  • Paintbrushes
  • Small bowl of water
  • Small bowl of cornstarch
  • Sandwich bag for storing extra fondant
  • The class workbook will include templates for hand-cutting these cookies, but we also carry all three cutters in our shop:
      • Bag with bouquet (this cutter was formerly part of our “Weekend Shopping Set,” so if you already have that set, you’re good to go)
      • Wreath
      • Scarf

Optional Extras

  • Fondant edging tools
  • Beginner’s tool set
  • Paint palette (if you don’t have a palette, no worries – you can mix your colors on plate or other wipeable surface)
  • Vodka or other clear alcohol for mixing food coloring (you can also just use water)
